Tasting Notes:
- Nose: Intense aromas of grilled coconut, roasted peanut, pecans, cashews, smoked almonds with sticky sugar, dark chocolate, vanilla fudge, butterscotch, cinnamon, nutmeg, and ground ginger. There are also hints of old leather jackets, distant pipe tobacco, a salty, brine'y olive note, and the smell reminiscent of a garden with an old petrol mower.
- Palate: Full and coating, even at 59%. Dominant flavors of fudge and butterscotch with fewer nuts. Mid-palate brings out grease, oil, olive, and red chillies dipped in dark chocolate. There's also a unique taste that combines camphor and what one might imagine boot polish to taste like.
- Finish: Extremely long, with notes of stem ginger, black peppercorns, chillies, nutty oak, coconut, caramels, maple syrup, vanilla fudge, and dark chocolate. A hint of salty olive and occasional camphor notes linger.
Curiosity:
- This rum is one of the brands produced by the Foursquare distillery in St Philip, Barbados and uses a recipe originally reserved for family members.
- It is named after the year of Bajan independence in 1966, hence the name "Sixty Six".
- The rum undergoes an initial aging process in oak for at least 12 years, all of which is done tropically in ex-bourbon casks. It's produced in small batches, and the rum is first matured for around 8-10 years before being sampled, selected, and the chosen rums re-racked for the remainder of the maturation period.
